15 minute Margherita Pizza

A quick, easy, and satisfying Italian classic!

15 minute Margherita Pizza

Yield: 1 pizza per serving      Prep: 5 minutes      Cook: 10 minutes

Ingredients (per person)

  • 1 piece of naan bread or flatbread
  • 2-3 oz fresh mozzarella
  • 2-3 tbsp any tomato sauce (I use a lightly flavoured tomato basil pizza sauce)
  • 1/2 a ripe tomato
  • fresh basil
  • 1/4 cup balsamic vinegar

Preheat oven to 425°F.

Spread a couple of tablespoons of tomato sauce on the naan/flatbread. Slice the fresh mozzarella thin and place a couple slices on top of the sauce. Repeat with the tomato. Cut the basil into strips and sprinkle on top. Place on a baking sheet and bake for 10 minutes.

While the pizza is baking, prepare the balsamic reduction. Bring balsamic vinegar to a boil and allow to simmer for 3 minutes.

When the pizza is finished baking, drizzle a spoonful or balsamic on top. Cut into pieces and serve!

Such a simple and light treat! You still get pizza goodness but not the heaviness of a bunch of meat and cheese. Serve as a light lunch or as an appetizer to share.
