Chicken Fajitas

Guilt-free and delicious. A fiesta in your mouth really. Not to mention super easy to make. If you’re feeling wild, throw together the ingredients in my fajita seasoning  and skip the mystery packs from the grocery store.

Chicken Fajitas

Yield: 6 servings   Prep: 10 mins   Cook: 15 minutes

  • 3 boneless skinless chicken breasts
  • 3 bell peppers— red, orange, green
  • 1 medium red onion
  • 1 lime, halved
  • 1-2 tbsp seasoning mix
  • 1 tbsp coconut oil
  • cilantro (optional garnish)

 

Slice the onion and the peppers and set aside.

Slice the chicken into strips and place in a medium bowl. Juice half the lime pour over chicken. Add seasoning mix and toss to coat chicken.

Heat coconut oil in a pan over medium heat. Add the chicken and cook until no longer pink, about 5 minutes. Remove chicken from the pan and set aside.

In the same pan, add the onions and peppers. Cover and cook for 5 minutes. Remove cover and let any liquid evaporate from the pan. Add the chicken back into the pan and combine.

Serve warm on tortillas. Garnish with remaining lime and cilantro.
