It’s like bbq chicken meets jalapeno poppers and they form a beautiful relationship inside a warm tortilla shell.
Jalapeño BBQ Chicken Taquitos
Yield: 12 taquitos Prep: 20 minutes Cook: 20 minutes
Ingredients
- 1 cup cream cheese, room temperature
- 1 cup sweet bbq sauce (I use maple bbq sauce, but use any kind you like)
- 4 strips bacon, cooked and diced
- 3 cups chicken, cooked and shredded
- ¼ cup pickled jalapenos, chopped
- 12 small tortilla wraps
- cooking spray
Pre heat the oven to 425 F
Whisk together the bbq sauce and cream cheese. Fold in the rest of the ingredients.
Add a couple of tablespoons of the mixture in a line from one side of the tortilla to another. Fold the tortilla over and roll it up. Repeat with the rest of the mixture/tortillas. Now you can call them taquitos.
Lightly spray a baking sheet with cooking spray. Place the taquitos in a single layer. Spray the tops of the taquitos with cooking spray (this is so they don’t toast too quickly).
Bake for 15 minutes.
If baking from frozen, add another 8 minutes or so.

I make fajitas a lot, so I wanted something different from the chicken and salsa combo. So I dug around my fridge and this is what I came up with. Bonus: These can be frozen! Do all the steps up until spraying and baking, put them in a freezer bag, and then they’re ready for a quick lunch or supper.
