Kick your pork up a notch with this sweet and spicy glazed pork chop baked to juicy perfection.
Honey Chipotle Glazed Pork
Yield: 4-6 servings Prep: 10 minutes Cook: 10 minutes
Ingredients
Pork:
- 4-6 pork chops
- olive oil
- salt & pepper
Honey Chipotle Glaze:
- ⅔ cup honey
- ¼ cup water
- 2 tbsp tomato paste
- 1 tbsp apple cider vinegar
- 1 tsp chipotle chili powder
- ½ tsp salt
- ¼ tsp onion powder
Make the Sauce:
In a small saucepan combine all ingredients. Bring to a simmer and cook for 5 minutes, stirring frequently. Remove from heat . The sauce will thicken as it cools.
Cook the Pork:
Pre-heat oven to 400° F and heat a large skillet over medium high heat.
Pat chops dry with a paper towel, then rub with olive oil and sprinkle with salt and pepper. Place them in the skillet and let cook 2-3 minutes per side to sear. Pour half the glaze over the pork chops and put them in the oven.
Bake until a thermometer inserted into the center reads 140 degrees F (about 5-8 minutes, depending on the thickness of your pork chops)
Allow the pork to rest for 5 minutes out of the pan.
Top with remaining glaze if desired.
You’ll definitely have glazed left over but have no fear, its delicious on everything. Stick it in the fridge and use it another time. Try it on chicken too!
Tips for cooking: Cooking time will vary depending on the thickness of your pork. If they are thin, sear them quicker and bake for less time. Pork dries out really easily. Thermometers are your friend.
