Tomato Basil Chicken

Fresh, light, quick, and easy! 

Tomato Basil Chicken

Yield: 4 servings   Prep: 5 minutes   Cook: 15 minutes

Ingredients

  • 4 small chicken breasts, or 2 large cut in half (depending on size)
  • salt & pepper
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2-3 cloves garlic, minced
  • 1 lb cherry tomatoes, halved length-wise
  • 1/4 cup fresh basil (not packed)

Heat olive oil in a skillet over medium-high heat. Season chicken breast with salt, pepper, and Italian seasoning. Add the chicken to the pan and cook until just about done, about 6 minutes per side.

Add the butter, garlic and tomatoes to the pan. Cook another 3 minutes. Add in the basil and toss to combine. Serve!


This chicken dish is so simple. Its packed full of fresh flavours and healthy to top it all off! Serve it over orzo, quinoa, or by itself with a slab of fresh bread to sop up the delicious juices.

Tips for cooking: Cooking times will vary depending on the thickness of the chicken. If you’re not sure, use a meat thermometer to ensure the internal temperature is 180°F.

The longer the tomatoes are cooked the softer they will get, so don’t overcook.
