Warm spices transform this cauliflower into a nutritious and delicious side dish.
Turmeric Spice Roasted Cauliflower
Yield: 3-4 servings Prep: 5 minutes Cook: 30-40 minutes
- 1 large head cauliflower, chopped into small florets and washed
- 2 garlic cloves, minced
- 1 1/2 tablespoon coconut oil, melted
- 1/2 tbsp lemon juice
- 1 tsp smoked paprika
- 1 tsp turmeric
- 1/4 tsp chilli powder
- 1/4 tsp red pepper flakes (optional)
- kosher salt to taste
Preheat oven to 425 degrees.
In a small bowl, whisk together garlic, coconut oil, lemon juice, paprika, turmeric, chilli powder, red pepper flakes, and salt. Place all ingredients in a large storage bag and shake well to coat.
Place coated cauliflower on a lined baking sheet, sprinkle with salt and roast until the cauliflower begins to brown (for about 30-40 minutes), stirring from time to time.
This is an easy side dish with a punch of flavour. It goes well with lightly seasoned white meat and fish.
Turmeric has tons of health benefits. My one caution of cooking with it is that beautiful yellow colour powerful. Fingers and kitchen towels beware!
