Spicy red snapper topped with fresh mango salsa.
Spiced Red Snapper with Mango Salsa
Yield: 4 servings Prep: 10 minutes Cook: 10 minutes
Ingredients
- 4 red snapper fillets
Spice Rub
- 2 teaspoons paprika
- 1 teaspoon dried oregano
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1/4 tsp cayenne pepper
Mango Salsa
- 2 mangos, diced
- 1/4 cup bell pepper, diced
- 1/4 cup red onion, diced
- 1 jalapeno, seeds removed and diced
- 2 tbsp cilantro
- Juice of one lime
- Pinch of salt
To make the Salsa:
Combine all ingredients. Refrigerate and let the favours meld while you prepare the fish
To make the Snapper:
Heat a non-stick pan over medium high heat.
Rinse the snapper in cold water and pat dry. Sprinkle a 1/2 teaspoon of spice mixture on one side of each fish fillet and rub it over the fish. Repeat on the other side of the fillet. Add fish to the pan and cook for 3 minutes per side, until the fish flakes easily with a fork.
Top with mango salsa and serve!
When you search red snapper different versions of this recipe always tops the list. This is just my swing at what turns out to be a really delicious flavour combination! The smokey, spiciness of the fish is balanced by the sweet salsa. I know fruit and fish sounds really strange together, but trust me… this is surprisingly delightful.
