Oven Fried Rice

Betty’s classic oven fried rice is the perfect side dish!

Oven Fried Rice

Yield: 6 servings   Prep: 5  minutes   Cook: 1-1.5 hours

Ingredients

  • 2 cups converted rice
  • 1 package onion soup mix
  • 3 1/2 cups water
  • 1/2 cup soya sauce
  • 1/4 cup vegetable oil
  • 5 white mushrooms, sliced
  • 1 medium onion, diced
  • 1 large carrot, diced
  • 1 stalk celery, diced
  • 1/3 cup frozen peas

Preheat oven to 350° F.

Combine all ingredients in a roasting pan. Cover and cook for 1-1.5 hours, stirring every 30 minutes.

This is a great meal for entertaining! Add/subtract any vegetables you like, its really up to you. You can also add chicken or pork to make this a meal in itself!

In my family, we usually pair this rice with Sweet & Sour Meatballs

Tips for cooking: Test the rice at 1 hour. I find mine is usually cooked at the 1 hour mark, but my roasting pan is larger than my mothers who suggested 1.5 hours.
