Avocado Toast: Two Ways!

Avocado toast is the perfect brunch food! Crispy toast, creamy avocado, and the perfect combination of add-ons. Serve these together for a well-balanced breakfast, or pick a fav and serve it on its own.

Spicy Poached Egg Avocado Toast

Ingredients (per person)

  • 1/2 an avocado
  • one piece of bread (I chose sourdough)
  • 1 egg
  • pinch of red pepper flakes
  • hot sauce (to taste)
  • salt and pepper (to taste)
  • lime juice (optional)
  • vinegar (for poaching)
  • olive oil

Preheat the oven to 350°F. Place the bread on a sheet pan. Lightly drizzle olive oil over the bread. Toast for about 5 minutes, flip and toast for another 3 minutes (you can also just use a toaster… its your life).

Scoop out the avocado meat into a bowl and mash with a fork. I add in a little squeeze of lime juice to brighten the flavour, but that’s your choice.

To poach the egg:

In a medium pot, bring water to a boil. Add in about a tablespoon of white vinegar and a generous pinch of salt. Crack your egg into a small dish. Create a swirling water vortex by stirring the water in a circular motion. Gently pour the egg into the centre of the vortex. Cook for 3 minutes. Remove and drain on paper towel.

To assemble the toast:

While the egg is cooking, prepare the toast. Spread the mashed avocado on the toast. Sprinkle the avocado with a pinch of red pepper flakes. Lay the egg on top along with a pinch of salt and cracked pepper. Finish it off with a couple of dashes of hot sauce.

Goat Cheese & Bacon Avocado Toast

Ingredients (per person)

  • 1/2 an avocado
  • one piece of bread (I chose sourdough)
  • 1 piece of bacon
  • 1/2 tbsp goat cheese
  • salt (to taste)
  • olive oil

Preheat the oven to 350°F. Place the bread on a sheet pan. Lightly drizzle olive oil over the bread. Toast for about 5 minutes, flip and toast for another 3 minutes (or use a toaster minus the olive oil).

Cook the bacon and crumble.

Scoop out the avocado meat into a bowl and mash with a fork (plus a squeeze of lime if you want).

Spread the mashed avocado on top of the toast. Crumble the bacon and goat cheese on top. Add a dash of salt and serve.


Such and easy and versatile breakfast or brunch!  If you haven’t tried avocado toast you really have to. Satisfying enough to fill you up but light enough not to weigh you down.
